Breakfast Potato Boats Dutch Oven Recipe

Easy Breakfast Idaho Potato Boats are a deliciously easy recipe to prepare at camp

8 leftover freshly baked potatoes–Idaho of course!!!
2 Cups Grated Cheese
1 Cup Pinched up Bacon Bits
Salt & Pepper to Taste
2 tsp. Paprika
1 Cup Butter / Margarine
1 Cup Chopped Onions
2 Tbsp. Log Cabin Seasoning

Make a slit in the potato and scoop out all the white potato meat. Or, make 8 potato shaped boats out to tin foil and us mashed potatoes. (about 8 cups instant or left overs) Mix all ingredients except 1 Tbsp. of seasoning or Paprika. Spoon the mixture into skins or boats.
Now place them in a 12″ Dutch Oven to warm through. Sprinkle with Log Cabin Seasoning or Paprika. Extra Cheese can also be sprinkled on top. Now the Bacon Bits. Heat till warmed through. Serve with hot rolls, biscuits, or pancakes with extra Bacon Strips. This dish can also be made with sausage and not the Bacon.
