Dutch Oven Breakfasts – Egg Puff Breakfast

A cross between muffins and quiche, egg puffs are a perfectly portioned breakfast or brunch dish made with eggs, mushrooms and cheese.

10 Eggs
1/2 Cup Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
1 Pound Monterey Jack Cheese
1/2 Cup Melted Butter
1 Pint small-curd Cottage Cheese
1 4-ounce Can Green Chiles

Beat Eggs until lemon in color. Mix remaining ingredients and add to the egg mixture. Warm and butter 12″ Dutch Oven. Pour in mixture.
Bake at 350 degrees for about 30 to 40 minutes.
