Pineapple Halibut Dutch Oven Recipe
This pineapple halibut Dutch oven recipe features tender white fish simmered in a savory-sweet, tropical soy-ginger sauce. It is a quick, one-pot meal that infuses the fish with flavor
1/4 Cup Soy Sauce
1/4 Cup reserved Pineapple Juice
2 teaspoons Vegetable Oil
1/4 teaspoon Garlic
1/4 teaspoon Ginger
1/2 teaspoon Sugar
1 1/2 pounds Halibut Fillet’s
1 (15 oz.) can Pineapple Chunks, drained (reserve juice)
Directions:
Combine all ingredients except halibut and pineapple. Mix well. Pour over halibut; let stand for 20 minutes. Remove halibut. Place halibut on broiler rack or on BBQ. Broil or BBQ for 5 minutes on each side for thin fillets, longer for thicker ones. If using a BBQ you might want to put them in a basket. This makes turning a lot easier!!! Fish should flake when done. Cover with pineapple last few minutes.
