Mustard Glazed Corn Beef Dutch Oven Recipe

So in honor of March and St. Patrick’s Day or for the Irish in you, try this Irish one pot dinner.

Ingredients:
1/2 Cup Brown Sugar
1 tsp Honey
1 tsp Mustard
1 Onion, Cut in Wedges
1/4 tsp. Garlic Salt
1 3 to 4 lbs. Corn Beef Roast
1 Cup Water

Instructions:
Rinse Roast if desired and pat dry. lightly warm & oil 12″ Dutch Oven. Rub garlic into meant and place roast into your dutch oven. Add Onion Wedges and about 1 Cup Water. Cover and let roast simmer. Use 12 coals for about 1.5 hrs to 2 hours. You will have to replace the briquettes about 2 times depending upon the weather. Mix brown sugar, mustard and honey. Brush the glaze over the top of the roast and bake another 15 to 20 minutes.

You can add new potatoes to the roast. Wash them thoroughly and place around the roast 30 minutes before serving. Cabbage can also be placed around the roast at the same time.

Carrots are another fine addition to the roads. Add them at the beginning or slice and add with the cabbage.
