Sweet Potato Corn Bread Dutch Oven Recipe
3/4 Cup Flour
1 1/4 Cups Yellow Cornmeal
3 tsp. Baking Powder
1 tsp. Salt
1/2 Cup Sugar
1/2 tsp. Nutmeg
2 Eggs, lightly beaten
2 T. Vegetable Oil
1 1/4 Cups Butter Milk or Milk
1/2 Cups Mashed Sweet Potatoes
Directions:
While you are mixing up all your ingredients pre-heat and oil your 8″ dutch oven.
Sift dry ingredients together. Slightly beat wet ingredients. Add sweet potatoes and mix well. Add wet ingredients to dry ingredients. Be careful not to over mix. Pour into to your 8″ or 10″ dutch oven. Bake at 450 degrees for 20 minutes or until corn bread is golden brown on the top. If you are using briquettes on the 8″ you will need 12 on the top and 8 on the bottom.
